Quick Weeknight Meal

I do like to make meals my family enjoys. So I take their suggestions and give them a new spin that makes less work for me while still keeping the flavor my family loves.

An easy way to do that is with all-in-one meals like sheet pan recipes.

That is how my simple, pizza meatloaf was born.

Two classics are combined to create a flavorful and unique meal your kids will love. And you won’t have to spend all day in the kitchen to make it happen.

If your kids are like mine, meatloaf tends to go in and out of favor pretty quickly. One day everyone loves it. The next it’s on the gross list (though making this mini version does help those selective eaters).

But when you transform meatloaf into pizza, it’s a kid-pleasing dinner.

My nine-year-old claimed, “You need to make meatloaf this way every time!” when I served pizza meatloaf.

You get the melty cheese and classic flavors of pizza in a nutrient-dense meatloaf. A win for everyone.

Easy Sheet Pan Dinner: Pizza Meatloaf and Veggies

Finding a nourishing dinner that kids love is always a win. And you really can’t go wrong with pizza in meatloaf form.

But what’s even better is that this sheet pan meal includes pizza-flavored hassleback-style potatoes and roasted veggies. As everything cooks together the vegetables soak in the juices and take on the delicious flavors as well.

My kids thought it was the best cauliflower they had ever tasted. And they already really like cauliflower.

If your kids are not fans of cauliflower, change it up with their preferred veggie. Or use this as an opportunity to use up whatever is in the refrigerator. Any hearty vegetable will work, such as carrots, parsnips, Brussels sprouts, cauliflower, or cabbage.

A Twist on Classic Meatloaf

Pizza meatloaf takes nutrient-dense ground beef to a whole new level. Add kid-friendly spices and your favorite pizza sauce for a flavorful dinner. The meat remains tender and moist while the cheese and pepperoni get bubbly and crispy.

This sheet pan dinner is easy to make dairy, gluten, and nut-free. If you need to avoid nightshades, no problem. Try this simple nightshade-free pizza sauce! Now everyone can enjoy pizza night. And you don’t have to tackle the hardest part of making pizza – the crust!

Pizza Meatloaf Sheet Pan Dinner Recipe

Ingredients

  • 2 heads cauliflower (or your favorite vegetable)
  • 1 Tbsp. extra virgin olive oil (use the code STEWARDSHIP for 10% off at that site!)
  • 68 small-medium potatoes
  • 1 Tbsp. extra virgin olive oil
  • 1/2 cup shredded mozzarella cheese
  • 2 lbs. grassfed ground beef
  • 1 egg
  • 1/2 cup milk or milk substitute
  • 1/2 cup quick oats
  • 1/2 cup shredded mozzarella cheese
  • 1 1/2 tsp. unrefined sea salt (Use the code kitchenstewardship for 15% off of your first purchase)
  • 1 tsp. garlic powder
  • 1 1/2 tsp. onion powder
  • 1 1/2 tsp. dried basil
  • 1 1/2 tsp. dried oregano
  • 2 Tbsp. non-fortified nutritional yeast (optional)
  • 1 tsp. desiccated liver powder (optional)
  • 1 tsp. multi-organs powder (optional)
  • 1 jar pizza sauce
  • pepperoni
  • 1 cup shredded mozzarella cheese

Instructions

  1. Heat oven to 400-degrees F.
  2. Chop cauliflower into florets and place on one end of a large baking sheet.
  3. Drizzle with 1 Tbsp. olive oil and season to taste with salt.
  4. Wash potatoes. Make 1/4-inch slices into potatoes, not cutting all the way through so the bottom stays intact. Make one slice in the opposite direction, not cutting all the way through.
  5. Place potatoes next to the cauliflower. Drizzle with 1 Tbsp. olive oil.
  6. In a large bowl, mix ground beef, egg, milk, oats, 1/2 cup cheese and seasoning. Mix until well combined.
  7. Place meat mixture in a round on the baking pan.
  8. Top the meat with 1 cup pizza sauce.
  9. Bake for 45 minutes.
  10. Remove pan from the oven.
  11. Open potatoes slightly and add seasoning (salt, garlic onion, basil, oregano to taste), a spoon of pizza sauce, and a sprinkle of shredded cheese.
  12. Top meatloaf with extra pizza sauce, 1 cup shredded cheese, and pepperoni.
  13. Return pan to oven. Bake 15-20 minutes, until cheese is melted and pepperoni is getting crisp.
  14. Serve immediately with remaining pizza sauce on the side.
  15. Store leftovers in a sealed container in the refrigerator.

Notes

  • Cauliflower may be replaced with carrots, Brussels sprouts, cabbage, or parsnips.
  • Pepperoni may be replaced with ham or your favorite pizza toppings.

Quick Weekday Dinner

One of the best parts of sheet pan dinners is that everything is cooked on one pan so you avoid extra dishes. This pizza meatloaf dinner makes enough to serve six.

The prep work only takes about fifteen minutes. And most of it can be done in advance if needed. Then the oven does all the work.

That leaves you with a few extra minutes to clean up. By the time dinner is ready the kitchen is already clean! You might even have enough time to play a quick game with the kids.

And if you’re like me and want to make life really simple, you serve dinner right on the sheet pan. It goes from the oven to the table. Just keep little hands away.
